Ah, meal prepping. Fish doesn’t keep so well, and chicken gets really boring. I decided to make my quinoa and broccoli lunches a little more exciting with this easy recipe:

- 1 lb. ground chicken
- Good Seasons Greek Dressing Mix (1 packet)
- 1 egg
- 2/3 cup quick oats
- salt/pepper to taste
Preheat the oven to 400 degrees F. In a big bowl, combine everything. Form the mixture into about 20 meatballs on a broiler pan sprayed with nonstick cooking spray. Bake for 15 minutes or until the center is no longer pink. Divide into 5 reusable plastic containers with your grain and veggie, and refrigerate until ready to reheat and eat.
