I might have a small problem with eating peanut butter right out of the jar. Ok, fine, it’s a big problem, and it’s probably not the best way to snack. Fortunately, I can make these easy peanut butter protein truffles in about 10 minutes and leave them in the fridge to snack on all week. They’re also awesome as preworkout snacks.

- 1/2 cup of peanut butter
- 3 tbsp of honey
- 1/8 tsp salt
- 2/3 cup vanilla whey protein powder (I like Isagenix IsaPro)
What to do:
- Mix the peanut butter, honey, and salt in a bowl until it’s blended. Add the protein powder and stir until it’s completely mixed. It’s going to be firm, like a dough, so this might be the time to grab the mixer and use the dough hooks.
- Roll 1 1/2 tbsps of the mixture into a 1-inch ball. Repeat until you have 12 balls.
- Place truffles into an airtight container and store in the refrigerator until you’re ready to eat them. They’ll keep for a week in the fridge and 3 months in the freezer.
