Peanut Butter Protein Truffles

I might have a small problem with eating peanut butter right out of the jar. Ok, fine, it’s a big problem, and it’s probably not the best way to snack. Fortunately, I can make these easy peanut butter protein truffles in about 10 minutes and leave them in the fridge to snack on all week. They’re also awesome as preworkout snacks.

You’ll need:

  • 1/2 cup of peanut butter
  • 3 tbsp of honey
  • 1/8 tsp salt
  • 2/3 cup vanilla whey protein powder (I like Isagenix IsaPro)

What to do:

  1. Mix the peanut butter, honey, and salt in a bowl until it’s blended. Add the protein powder and stir until it’s completely mixed. It’s going to be firm, like a dough, so this might be the time to grab the mixer and use the dough hooks.
  2. Roll 1 1/2 tbsps of the mixture into a 1-inch ball. Repeat until you have 12 balls.
  3. Place truffles into an airtight container and store in the refrigerator until you’re ready to eat them. They’ll keep for a week in the fridge and 3 months in the freezer.
