Hungry? All the time, yes. I’m always on the lookout for healthy snacks, and what could be better than something with protein?
These banana blondie protein pucks make me feel slightly less guilty for eating chocolate. They’re gluten-free too! And yes, I did adapt the recipe from Power Hungry: The Ultimate Energy Bar Cookbook, which is one of those cookbooks you need to have.
➡️1 cup almonds
➡️1 1/4 cup mashed ripe bananas
➡️3 large eggs
➡️2 large egg whites
➡️1 cup vanilla protein powder (I like Isagenix IsaPro)
➡️1 tsp baking powder
➡️ 1/4 tsp salt
➡️1/2 cup chocolate chips
Spray a muffin tin with nonstick cooking spray.
Preheat oven to 325 degrees Fahrenheit.
Place almonds in a food processor (I used my blender) and grind until they’re finely chopped. Add everything else except the chocolate chips and blend until smooth.
Stir in the chocolate chips by hand.
Pour the batter into the muffin tin, bake for 20 minutes, and let cool. Store in the refrigerator.
