This pork noodle bowl recipe is simple to make and delicious. I normally roast a pork tenderloin and have plenty of leftovers, so when I make it, I skip the part where I need to cook the pork thoroughly. Instead, I heat the leftover pork tenderloin all the way through after cutting it up into bite-size pieces. It makes the prep and cooking time that much faster, which is great for a busy weeknight after I stumble down from my home office.

Ingredients

  • 6 oz uncooked gluten-free spaghetti
  • 1/2 cup gluten-free soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • cooking spray
  • 1 pound lean pork tenderloin, cut into 1/2-inch pieces
  • 4 cups sliced bok choy
  • 1 can (11 ounces) mandarin orange sections, drained
  • 1/2 cup sliced green onions

Instructions

  1. Stir soy sauce, vinegar, and red pepper flakes together in a small bowl until blended. Set aside.
  2. Spray a large skillet liberally with cooking spray. Add the pork and stir-fry until it's no longer pink. Remove the pork from the skillet.
  3. Add bok choy to the skillet and stir-fry for 1-2 minutes until it's wilted. Then, add the pork back to the skillet.
  4. Stir the soy sauce mixture into the skillet and cook until heated through.
  5. Meanwhile, cook the pasta as directed on the package. Drain.
  6. Toss the pork mixture, orange sections, green onions, and pasta in a bowl until coated. Serve.
