One of my biggest challenges with meal prep is protein. Essentially, I do not enjoy cutting up chicken breasts. I found this slow cooker taco chicken recipe and was pleased with its ease and versatility. You can make taco bowls with rice or quinoa, actual tacos, or serve it over pasta. One of the things I love about the slow cooker is that I don’t have to constantly tend to my food. I literally “set and forget it.” It also makes meat extra-tender. When I take this taco chicken out of the slow cooker, I need to be extra-careful because it’s so tender it literally falls apart. Finally, I don’t have to spend a lot of time prepping and cutting the chicken – definitely a win in my book.
I made a big batch of chicken from this slow cooker taco chicken recipe. To make the aforementioned quinoa bowls, I used 1/2 cup of cooked quinoa, some mixed greens, 3 oz of the chicken, and 1/4 of an avocado. It’s a pretty satisfying lunch and fits in with my meal plan.
To shake things up, I also made tacos (of course). My meal plan allows for two corn tortillas as my serving of healthy carbs. I added 3 oz of the chicken, mixed greens, and 1/4 of an avocado.
Lest that sounds bland, keep in mind that I love tacos. I also view food more as fuel than a flavor explosion/party in my mouth. The slow cooker taco chicken has just the right blend of spices to work in tacos, but it also is subtle enough to eat on its own.
Other Uses for the Slow Cooker Taco Chicken Recipe
You could also make a batch of slow cooker taco chicken for your Taco Tuesday festivities. (Every day for me is Taco Tuesday.) Start the chicken first thing in the morning. Create a “build your own taco” bar for your family with shredded lettuce, some chopped tomatoes, and cheese. Pick up the taco shells they like.
Taco mac and cheese for the kids is a good way to sneak in protein. After you’ve cooked the kids’ favorite mac and cheese, add in some of the taco chicken. It’s a healthier alternative to ground beef, and in my experience, kids will eat almost anything buried in mac and cheese.
